Yum!

Well, we woke up this morning like any other morning, got the boys ready for school and waited.  We waited, and waited and finally realized the bus wasn't coming.  I checked the School website and sure enough, SNOW DAY!!!!  The kids were so excited - they threw up their mitts in the air and gave me a big hug.  I decided we'd spend the morning baking.  Let me rephrase that.  I would spend the morning baking, they would spend the morning sitting on their butts watching cartoons while they cleaned out the bowls!!  Jack was the only one who seemed remotely interested in helping me bake! 

My sister and her adorable boys are coming for a few days so I am in the process of baking muffins, cupcakes and cookies!!  I can't wait for them to get here......

I found this awesome muffin recipe and figured I'd share it with you.


Ingredients:
1 3\4 Cup Flour
3/4 Cup Sugar
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
1 Egg
1/2 Cup Vegetable Oil
1/2 Cup Plain or Vanilla Yogurt
1 tsp Vanilla
1 Cup Mashed Ripe Banana
3/4 Cup Chocolate Chips

In a large bowl, combine flour, sugar, baking powder, baking soda and salt. In another bowl, combine the egg, oil, yogurt and vanilla. Stir into dry ingredients just until moistened. Add banas and chocolate chips. Fill greasd or paper-lined muffin cups two-thirds full. Bake at 350 degrees for 22-25 minutes or until a toothpick comes out clean. Cool for five minutes before removing from pans to wire racks.

I also made some "Dad's Cookies" this morning too - but I add chocolate chips to mine!


1 Cup Sugar
1/2 Brown Sugar
1 Cup Butter, softened
1 Egg
3/4 Coconut
1.5 Cup Flower
1 tsp Baking Soda
2 tsp Baking Powder
1-1/4 Cup of Oatmeal
1-1/2 tsp Vanilla

Mix and Drop onto ungreased cookie sheet. Bake at 350 for 12 minutes.
